Mexican Pork Chops

Super quick weeknight dinner option! I personally love that it uses pantry staples that you may have on hand already. Serve with cornbread.
2 TB Vegetable Oil
6-8 Boneless Pork Chops
3+ Cups Bottled Salsa
1 Can Black Beans
1 tsp Cumin
1 tsp Oregano (break it down by rubbing it as you put it in)
1 Cup Shredded Mexican Cheese Mix
Sear pork chops ~2 minutes per side over medium high heat. Work in batches if necessary. Add salsa, cumin, and oregano. Cover and simmer for about 8 minutes at medium heat. Sprinkle Mexican cheese on top, cover, and cook until cheese is melted.
